Cookie truffles are simple, yet rich treats you can make at any time for any occasion. I came across an Oreo cookie truffle recipe a couple of weeks ago and decided to try it out for Valentine's Day. Let me tell you-they did not disappoint! Even my husband liked them and he doesn't really eat sweets. I love this recipe because it's simple (just three main ingredients) and you can use any cookie to make a variety of truffles. Not to mention the topping choices can make the flavor combinations endless! Truffles also make a great gift for your friends and loved ones and today is the perfect day to share some truffles.

Ingredients:
Oreos (or any cookie)
Cream Cheese
Chocolate Melts
Sprinkles, cocoa powder, chopped nuts, shredded coconut, powdered sugar, coarse sea salt or sugar, crushed peppermint or cookie crumbs to top truffles
Instructions:
Take one pack of Oreo cookies (original, not double stuffed) and crush them using a food processor. Add one 8 oz. package of softened cream cheese and mix until well combined. Using a teaspoon or cookie dough scoop, measure out the size of your truffles and roll them into balls. Place your formed truffles onto a baking sheet lined with parchment paper. Freeze your truffles for 15 minutes. Once your truffles are hardened, melt your chocolate and dip your truffles. Place them back on the parchment paper to set. Be sure to put your toppings on immediately after dipping. Your truffles are ready to enjoy!
Notes:
Serving and storing your truffles- when you are ready to eat or serve your truffles, place them on a cool surface. Beware of leaving them out in a warm room for an extended amount of time (no longer than two hours). Truffles can be stored in the refrigerator for up to two weeks and 6 months in the freezer.
Substitutions- as I mentioned above, any cookie can be used for this recipe. Bischoff, sugar cookie and Nutter Butter are popular choices. Since Oreo has so many flavors, you could try lemon, birthday cake, mint truffle recipes and so much more.
Additional ingredients and toppings- the recipe for cookie truffles is basic, but you can always add more ingredients for added flavor. You may consider vanilla extract, caramel, sea salt or cayenne pepper. The toppings listed above are great choices to add more flavor and texture as well. Additionally, you could get adventurous and add crushed cereal or gold leaf for a fun or fancy presentation.
